Tartine for Lunch

Inspired by my trip to Le Pain Quotidien in New York City, I came up with today’s lunch. Quick, simple and fresh — with all of my favorite ingredients already in my inventory, I assembled a tartine (or open-faced sandwich) to power me through the afternoon.

Ingredients: Sourdough toast, prosciutto, burrata & arugula (lightly drizzled with extra virgin olive oil)

Definitely could’ve used a sweet factor to cut through the richness, such as figs or pears. Unfortunately, I just didn’t have either on hand. Still, for only about $3/4 worth of ingredients, I made myself a lunch that would’ve costed me about $15 in a restaurant. I’m pretty happy with that.
